The present invention relates to noodles in which lecithin and taurine are added. Noodles are manufactured by mixing, 3 to 10 parts by weight of a lecithin powder, 0.3 to 2 parts by weight of a taurine powder, and 0.1 to 0.5 parts by weight of salt with 100 parts by weight of medium flour. A dough kneaded by putting water into the mixture is rolled through a noodle machine as well as chopped into several strands.
