PROBLEM TO BE SOLVED: To provide a powder composition for gelatinization by adding it to various juices, milk, soybean milk, acidic milk beverage, syrup of canning or the like with powder form, not based on conventional liquid desert base.SOLUTION: There is provided a desert base with powder form which becomes gelatinous article with homogeneity and good texture and flavor by adding a composition by mixing powder of calcium salt of 5 to 40 wt.% and phosphoric acid salt of 10 to 50 wt.% with a powder of low methoxyl pectin of 20 to 60 wt.% of 2 to 6 g to 100 mL of various beverages such as milk, various juices, soybean milk, acidic milk beverage and syrup of canning.SELECTED DRAWING: NoneCOPYRIGHT: (C)2016,JPO&INPIT【課題】従来の液状のデザートベースではなく、粉末形態のまま各種ジュース、牛乳、豆乳、酸性乳飲料、缶詰のシロップなどに添加してゲル化させる粉末組成物の提供。【解決手段】低メトキシルペクチンの粉末20~60重量%に、カルシウム塩5~40重量%、リン酸塩10~50重量%の粉末を混合した組成物を、牛乳、各種ジュース、豆乳、酸性乳飲料、缶詰のシロップなどに各種飲料の100mLに対して2~6g添加することで、均質でテクスチャーおよび風味のよいゲル状物となる、粉末形態のデザートベース。【選択図】なし
