PROBLEM TO BE SOLVED: To provide an absorption suppressing agent of a starch-containing food, capable of controlling an amount of water absorption even if water around the food is excessive when making the food absorb water in cooking before ingesting and ingesting the food, and to provide the starch-containing food containing the absorption suppressing agent.

SOLUTION: This absorption suppressing agent of the starch-containing food contains starch adhesive comprising at least one selected from Arabian gum, soybean polysaccharides, pullulan, arabinogalactan, low viscous Cyamoposis Gum, low viscous Locust bean gum, low viscous Tara gum, low viscous tamarind gum, low viscous konjakmannan, a starch decomposition product with DE value of 1-15, a starch decomposition product having a cyclic structure of molecular weight of 8,000-800,000. The absorption suppressing agent can suppress an amount of water absorption of the starch-containing food which is made to absorb water in cooking before ingesting and ingested.
