Disclosed are edible compositions comprising a compound of Formula (I), (V), (VIII), (XI) or (XII), food, consumer and pharmaceutical products comprising such edible compositions and methods of preparing such products. The compounds of Formula (I), (V), (VIII), (XI) or (XII) modulate the bitter tastes of other compounds. Also disclosed are methods of reducing the amount of NaCl or sugar in a product, methods of reducing the sodium or sugar intake in a diet, and methods of reducing bitter tastes in a food product using the compounds.
