PROBLEM TO BE SOLVED: To provide a peptide-containing food composition having transparent liquid properties in liquid food or drink, and reduced in bitterness/astringency while containing whey peptide at higher content.
SOLUTION: The peptide-containing food composition is used for liquid food or drink, and is reduced in bitterness/astringency of the peptide containing shiitake extract, sodium inosic acid and sodium guanylic acid. Inclusion of acetic acid and/or tea extract results in reinforcing masking effect on the bitterness/astringency.
