PROBLEM TO BE SOLVED: To provide a spirit-containing seasoning having rich tomato flavor and enhancing umami of Western food in cooking of Western food such as consomme soup.SOLUTION: The mixture including 10-20%(w/v) of tomato extract, 10-22%(w/v) of either one of pregelatinized rice or sweet sake for seasoning sediment, amylase, and salt is fermented with yeast, thereby the spirit-containing seasoning having flavor and umami of tomato and suitable for cooking of Western food such as consomme soup can be obtained.
