PROBLEM TO BE SOLVED: To provide a tea-leaf processed product which is a drink or food having reduced bitter and astringent taste, free from effect on the flavor even adding sufficient amount of catechins and theaflavins, and to provide drink or food in preferable form containing the tea-leaf processed product in a reduced cost.SOLUTION: There is provided the bitter and astringent taste inhibitor comprising casein phosphopeptide or sericin as an active component.
