PROBLEM TO BE SOLVED: To provide a material prepared by a tea-derived raw material and merely added in minute quantity to food and drink containing tea, particularly to a container-packed tea drink, to increase a feeling of tea leaves, to enhance taste such as the thickness of taste and a body feeling and to improve balance.SOLUTION: A taste improver for food and drink containing tea, added in minute quantity to a tea drink to increase a feeling of tea leaves, to enhance taste such as the thickness of taste and a body feeling and to improve balance is prepared from a heat-treated material obtained by heat-treating a tea extract at 100-180°C for 10 minutes to 5 hours.COPYRIGHT: (C)2014,JPO&INPIT【課題】茶含有飲食品、特に容器詰めの茶飲料に対し、微量添加するだけで、茶葉感をアップし、味の厚みやボディ感などの呈味を増強し、バランスの改善をはかることができる素材を、茶由来原料により調製し、提供する。【解決手段】茶飲料に微量添加することにより、茶葉感をアップし、味の厚みやボディ感などの呈味を増強し、バランスの改善をはかることができる茶含有飲食品用呈味改善剤を、茶抽出液を100℃~180℃にて10分~5時間加熱処理して得られる加熱処理物より作成する。【選択図】なし
