PROBLEM TO BE SOLVED: To prepare a taste improver only a tiny amount of which is added to coffee-containing food and beverage, in particular to a packaged coffee beverage, to increase coffee bean feeling, enhance taste such as thickness of taste and/or body feeling and thereby enable improvement in balance, by using coffee bean-derived raw material.SOLUTION: A taste improver for coffee-containing food and beverage includes heat-treated material obtained by treating coffee bean extract liquid at 100-180°C for 10 minutes to 5 hours.
