PROBLEM TO BE SOLVED: To provide a processing unit capable of shortening a processing time of a raw meat lump by allowing pickling liquid to penetrate quickly into the raw meat lump.SOLUTION: There is provided a processing unit of a raw meat lump B provided vertically movably, for punching an injection needle 19 of an injection head 3 for sending pickling liquid therethrough into the raw meat lump B to thereby inject the pickling liquid. In the processing unit of a raw meat lump B, foam generation means for generating foam from the pickling liquid is provided, and the foam generation means is allowed to communicate with the injection head 3, to thereby inject the foamy pickling liquid from the injection needle 19 of the injection head 3 into the raw meat lump B. The generation means forms the picking liquid into a foamed state by sucking a gas.SELECTED DRAWING: Figure 1
