PROBLEM TO BE SOLVED: To efficiently and safely extract a useful substance such as catechin from a tea leaf.SOLUTION: A solvent is selected from a plurality of solvents, switched to the most suitable solvent for the tea leaf, and supplied to an extraction process. The selected solvent is pressurized in a high-pressure state and heated in a range from room temperature to 160°C, and the effective substance is made to contact with the tea leaf and stepwise or continuously extracted. The selected solvent is water or a mixture liquid of water and ethanol. The effective substance extracted from the tea leaf is cooled and recovered in a pressure-holding state.
