PROBLEM TO BE SOLVED: To provide a new production method for producing nanoparticles having a further improved physiologically active substance carrying capacity using three components of gallate catechin, animal protein, and an acid.SOLUTION: Nanoparticles having an excellent physiologically active substance carrying capacity are obtained by: preparing a solution containing gallate catechin and animal protein by mixing three components of gallate catechin, animal protein, and an acid with water, a water-containing organic solvent, or an organic solvent so as to contain, as solid, the gallate catechin in an amount of 5-20 wt.%, the animal protein comprising whey proteins or their decomposed product in the total amount of 5-20 wt.%, and the acid in an amount of 5-20 wt.% preparing a solution containing physiologically active substances by dissolving physiologically active substances with water, a water-containing organic solvent, or an organic solvent and mixing the solution containing the gallate catechin and the animal protein and the solution containing the physiologically active substances with each other and drying the obtained mixed solution. When the nanoparticles are dispersed in an aqueous solvent, the physiologically active substances are carried thereon in an amount of 50% or more.SELECTED DRAWING: NoneCOPYRIGHT: (C)2016,JPO&INPIT【課題】ガレート型カテキン、動物性タンパク質および酸の3成分を用い、さらに生理活性物質の担持力を向上させたナノ粒子の新たな製造方法を提供すること。【解決手段】ガレート型カテキンを固形分として5~20重量%、乳清タンパク質またはこれらの分解物からなる動物性タンパク質を固形分として合計5~20重量%、酸を固形分として5~20重量%となるように水、含水有機溶媒または有機溶媒に前記3成分を混合して、ガレート型カテキン、動物性タンパク質含有液を作製し、生理活性物質を水、含水有機溶媒または有機溶媒に溶解させて、生理活性物質含有液を作製し、前記ガレート型カテキン、動物性タンパク質含有液と、生理活性物質含有液とを混合し、得られる混合液を乾燥して、生理活性物質の担持力に優れたナノ粒子を得る。前記ナノ粒子を水溶媒に分散させたときに生理活性物質が50%以上担持されている。【選択図】なし
