More specifically, the manufacturing method of germinated black rice vinegar comprises the following steps: extracting glycoside of an anthocyanin pigment from black rice, and immobilizing the same to obtain a composition germinating and saccharifying the black rice alcohol-fermenting the saccharified black rice liquid acetic-fermenting the alcohol-fermented black rice liquid and adding the composition obtained by extracting glycoside of an anthocyanin pigment from black rice and immobilizing the same to the acetic-fermented liquid, and aging the mixture.
