Provided is a method for mass-producing processed aquatic products for cryopreservation, which is capable of increasing preference of aquatic products by removing fishy smell and odor from the aquatic products and also maintains freshness of the aquatic product for a long period of time by suppressing formation of microbes, thereby extending a preservation period of the aquatic product. To this end, the method comprises the following steps: (a) a pretreatment step of removing foreign matters and non-edible parts included in the aquatic product and washing the aquatic product with washing water; (b) a freezing step of rapidly freezing the washed aquatic product; (c) a processing step of cutting the rapidly frozen aquatic product so as to prepare processed aquatic product; (d) a freezing step of washing the prepared processed aquatic product and then forming an ice film over surfaces of the processed aquatic product; (e) a processed aquatic product production step of preparing the processed aquatic product by internally packaging the processed aquatic product, and then checking whether metallic foreign matters are contained in the prepared processed aquatic product; and (f) a packaging step of externally packaging the processed aquatic product which had undergone the metal inspection step.본 발명은 수산물의 비린내 및 잡냄새를 제거하여 수산물의 기호도를 높이는 것은 물론, 미생물의 생성을 억제하여 수산물의 신선도를 장기간 유지시키며, 수산물의 보존기간을 연장할 수 있어 냉동 보존용 가공 수산물을 대량 제조할 수 있는 방법에 관한 기술 내용을 제공하고자 하는 것이다.
