PROBLEM TO BE SOLVED: To provide a new detergent for fresh food excellent in treatability, effective and safe, and in which the removal of saprophyte and freshness maintenance can be more effectively exhibited, and a cleaning method using the same.SOLUTION: Provided is a detergent 1 for fresh food essentially consisting of calcium oxide derived from a shell coated with a coating agent of a water-soluble stock before or after molding into a tablet shape, in which PH value when being into a 1 wt.% water solution is 12 to 13. Also provided is a method for cleaning fresh food characterized in that, water for cleaning is dissolved with the detergent for fresh food so as to be cleaning water 3, fresh food 4 as the object for cleaning is immersed into the cleaning water 3 for a prescribed time, and thereafter, the fresh food is taken out.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2017,JPO&INPIT【課題】取扱い性に優れ、有効且つ安全で、雑菌の除去や鮮度保持がより効果的に発揮される新規な生鮮食品用洗浄剤とこれを用いた洗浄方法を提供する。【解決手段】生鮮食品用洗浄剤1は、タブレット状に成型する前もしくは後に水溶性素材のコーティング剤でコーティングされた貝殻由来の酸化カルシウムを主成分とし、1重量%水溶液とした場合のPH値が12~13であることを特徴とする。また、生鮮食品の洗浄方法は、洗浄用水に前記生鮮食品用洗浄剤を溶解させて洗浄水3となし、洗浄対象の生鮮食品4を前記洗浄水3に所定時間浸漬した後当該生鮮食品を取出すことを特徴とする。【選択図】図1
