The present invention relates to a method for preparing cabbage kimchi for a vegetarian without animal raw ingredients and five pungent vegetables, and cabbage kimchi prepared thereby. The method comprises the steps of: (1) preparing salted cabbage by immersing a cabbage in salt water and washing the cabbage to remove salt therefrom； (2) preparing a mixed concentration solution by adding water to a mixture, in which Opuntia humifusa, Taraxacum platycarpum, and Yucca gloriosa are mixed, extracting from the mixture, and filtering and concentrating an extract； (3) preparing broth by heating a mixture, in which water, radish, dried Lentinula edodes, and dried kelp are mixed, and filtering the mixture； (4) preparing kimchi seasoning by mixing the broth prepared in the step (3) with the mixed concentration solution prepared in the step (2) and sliced radish, chili powder, table salt, sliced carrot, glutinous rice glue, vinegar, chopped ginger, L-sodium glutamate, white sugar, capsaicin seasoning powder, and lactic acid； and (5) mixing the salted cabbage prepared in the step (1) with the kimchi seasoning prepared in the step (4).
