The present invention relates to a healthy juice manufactured by heating and grinding vegetables and mixing the vegetables with a fruit juice. According to a method for manufacturing a healthy juice of the present invention, to increase intake of dietary fiber of consumers, 12-21 wt% of tomatoes, 12-21 wt% of carrots, 6-14 wt% of broccoli, and 6-14 wt% of cabbages are washed and crushed; the vegetables are boiled at 90-98°;C for 30-60 minutes with 16-57.9 wt% of water; the vegetables are finely ground with the boiled water; 2-4 wt% of a white grape concentration juice and 2-5 wt% of banana puree which have a natural sweetening effect in an palatable aspect, and 2-4 wt% of an apple concentrated juice and 0.1-1 wt% of a lemon concentrated juice which have a natural sour taste effect are mixed with the vegetables to increase ease of eating the vegetables; the mixture is heated at 90-98°;C for 10 minutes and then is packaged in a container; the mixture is pressurized and sterilized at 115-121°;C for 10-20 minutes; and then the mixture is cooled until the temperature of the mixture becomes 50°;C or lower. Accordingly, a person can intake all ingredients of the vegetables. The healthy juice can be stored for a long period of time (at least one year) while taste unique to the juice can be maintained by controlling spore generating bacteria with sterilization at high temperatures and pressurization.본 발명은 채소를 익혀 갈아서 과즙과 혼합하여 제조하는 건강주스에 관한 것이다. 본 발명은 소비자의 식이섬유 섭취 증진을 위해서 토마토 12~21중량%, 당근 12~21중량%, 브로콜리 6~14중량%, 양배추 6~14중량%를 세척한 후 파쇄하여 물 16~57.9중량%와 함께 90~98℃에서 30~60분간 익히고, 익힌 물과 함께 세밀하게 갈아준 후 채소의 섭취 용이성을 높이기 위해서 관능적으로 천연의 감미의 효과가 있는 백포도농축과즙 2~4중량%, 바나나퓨레 2~5중량%와 천연 산미의 효과가 있는 사과농축과즙 2~4중량%, 레몬농축과즙 0.1~1중량%를 함께 혼합하여 90~98℃에서 10분간 가열하여 용기에 포장하고, 115~121℃의 온도에서 10~20분간 가압 살균한 후 50℃이하 온도가 될 때까지 냉각시키는 것으로 구성되는 건강주스의 제조방법으로 채소의 전 성분을 모두 섭취할 수 있으며, 고온가압 살균으로 포자형성균까지 제어하여 주스 고유의 맛을 유지하면서 상온에서 1년 이상 장기간 저장이 가능하다.
