To provide acid seasoning mixed with garlic, decreased in stimulation such as pungent taste and having excellent flavor.

SOLUTION: A method for producing the liquid seasoning includes a mixture of raw garlic followed by heating so as to bring a heating integrated value which is shown by the product of [a temperature difference (° C) between a heating temperature of &ge 60° C and 60° C], and [a heating time (minute)] to 200-900° C× minute.
