PROBLEM TO BE SOLVED: To provide a method for producing hydrogenated oil and fat containing aquatic animal oil by which hydrogenation at low temperature to aquatic animal oil such as fish oil can be smoothly performed to minimize generation of trans-acid, and also the hydrogenated oil and fat is efficiently produced by a relatively simple operation to keep practicality unspoiled, or such hydrogenated oil and fat containing aquatic animal oil is obtained.SOLUTION: The method for producing hydrogenated oil and fat containing aquatic animal oil including: hydrogenating mixed oil comprising 20-80 mass% of aquatic animal oil and 80-20 mass% of edible oil whose iodine value is lower than that of the aquatic animal oil and which contains no aquatic animal oil, or ester exchange oil and adjusting the temperature rising rate of oil and fat per 1 unit of the reduction in the iodine value due to the hydrogenation into 0-0.5 so that the increasing amount of the trans-acid due to the hydrogenation may be not more than 18 mass%. The edible oil having an iodine value lower than that of the aquatic animal oil and containing no aquatic animal oil is hydrogenated at a low rate and therefore the hydrogenation reaction on the aquatic animal oil causes relatively rapidly. The mixture oil or the ester exchange oil is rapidly hydrogenated at a temperature lower than that in hydrogenation of only the aquatic animal oil, and increase in the trans-acid during that span is suppressed to satisfactorily perform the hydrogenation while suppressing increase in the trans-acid.COPYRIGHT: (C)2013,JPO&INPIT【課題】魚油などの水産動物油に対してトランス酸の生成をできるだけ少なくするように低温での水素添加を円滑に進めることを可能とし、しかも実用性を損なわないようにして比較的簡単な操作によって効率よく水素添加油脂を製造し、またはそのような水産動物油含有の水素添加油脂を得ることである。【解決手段】水産動物油20~80質量%と、ヨウ素価が前記水産動物油より低く水産動物油を含まない食用油80~20質量%との混合油またはエステル交換油を水素添加し、この水素添加によるトランス酸の増加量が18質量%以下であるように水素添加によるヨウ素価の低下量1単位当たりの油脂温度上昇率が0~0.5に調整して水産動物油含有水素添加油脂を製造する。ヨウ素価が前記水産動物油より低く水産動物油を含まない食用油は、水素添加の速度が遅いので、相対的に水産動物油の水素添加反応が速く起こり、混合油またはエステル交換油は、水産動物油の単独の場
