PROBLEM TO BE SOLVED: To provide a stable carotenoid-containing product with high levels of carotenoid.SOLUTION: One or more microcapsules of carotenoids includes a carotenoid content of about 5-20 wt.% including a protective coating releasing carotenoids upon ingestion of the microcapsules. The coating includes a sugar or polyhydric alcohol, a starch or dextrin, and optionally a protein. The microcapsules are formed using a fluidized bed coating machine for spraying the coating material.
