The present invention relates to a manufacturing method of fermented soybean paste and fermented soybean paste by the same which reduces the unique scent of fermented soybean paste. The manufacturing method of fermented soybean paste comprises: a washing and foreign substance removal step (S1) of preparing white soybeans, washing the white soybeans, and removing foreign substances; a water soaking step (S2) of soaking the white soybeans which has undergone the washing and foreign substance removal step (S1) in water two to five times the weight of the white soybeans for 6-12 hours; a steaming step (S3) of steaming the white soybeans which have undergone the water soaking step (S2) under a steam pressure condition for 15-20 hours; a fermentation preparation step (S4) of injecting a bacillus subtilis strain culture medium into the white soybeans which has undergone the steaming step (S3), then uniformly mixing the white soybeans, placing the white soybeans in an inner small container to arrange the white soybeans in a fermentation container, and loading the fermentation container on a fermentation cart; a fermenting step (S5) of moving the fermentation cart on which the fermentation container loaded to a fermentation chamber after the fermentation preparation step (S4), and maintaining for 30-40 hours in conditions of relative humidity of 90-89% and a temperature of 38-45 degrees; and a packaging step (S6) of packaging the white soybeans in the inner small container or drying and grinding the white soybeans to package the white soybeans after the fermenting step (S5).
