A method for the manufacture of a freeze-dried coffee powder comprises (1) providing a coffee extract having from 40-55wt% solids, (2) adding gas to provide a gas-containing extract at above atmospheric pressure, (3) depressurising to form a foamed coffee extract, (4) cooling the foamed coffee extract to below -40°C with low or no shear to form a frozen coffee extract, (5) grinding the frozen extract to a powder, and (6) drying the powder. The cooling step (4) comprises (4a) cooling the foamed coffee extract to a first temperature 1°C above a freezing point of the foamed coffee extract; (4b) cooling the foamed coffee extract to a second temperature 3°C below the freezing point of the foamed coffee extract, and (4c) cooling the foamed coffee extract from the second temperature to below -40°C. Cooling step (4b) has a duration of from 5 to 60 minutes, preferably 10 to 30 minutes. A freeze dried coffee powder which provides a crema of at least 0.25ml/g upon reconstitution with water is also claimed, and comprises particles having open gas bubbles 5 and ice-crystal voids 15 with closed porosity <;15%, and low interconnectivity such that less than 80% intrusion is achieved under 40psia Hg.
