PROBLEM TO BE SOLVED: To provide a jelly beverage with large jelly lumps coming out from a spout opening and having texture such as crumbling in a mouth and with less syneresis.SOLUTION: The jelly beverage is obtained by: charging a thermally-dissolved jelly raw material composition containing 0.1-0.4 mass% of deacylation gellan gum, 0.001-0.01 mass% of native gellan gum and a surfactant having an HLB of ≥9, and water, in a pouch with a spout, and cooling the composition at a cooling rate of ≤3°C/min from a gelatinization-starting temperature to a gelatinization-finishing temperature to gelatinize the composition.COPYRIGHT: (C)2013,JPO&INPIT【課題】スパウト口から出てくるゼリー塊が大きく、口の中で崩すような味わいのある食感を有し、離水の少ないゼリー飲料を提供する。【解決手段】脱アシルジェランガムを0.1~0.4質量%と、ネイティブジェランガムを0.001~0.01質量%と、HLB9以上の界面活性剤と、水とを含有する加熱溶解したゼリー原料組成物を、スパウト付きパウチに充填し、ゲル化開始温度からゲル化終了温度までを3℃/min以下の冷却速度で冷却してゲル化させて得られるゼリー飲料。【選択図】なし
