PURPOSE: A method of manufacturing spaghetti using pig skin is provided to efficiently remove boar-taint by adding ethanol to the pig skin and to manufacture spaghetti with excellent organoleptic properties.CONSTITUTION: A method of manufacturing spaghetti using pig skin comprises removing fat layers adhered to the lower part of the pig skin putting the fat removed pig skin into purified water and heating the same at 95-100 deg. Celsius for 50-70 minutes washing the heated pig skin and cooling the same at 8-12 deg. Celsius for 18-22 minutes molding the cooled pig skin into a noodle form washing the molded pig skin noodle and dipping the same into a soaking solution in which an acidulant is added and dehydrating the dipped pig skin noodle and packing the same. Onion, garlic, spring onion, ginger and ethanol are additionally added to the purified water. The dipping is performed in the soaking solution in which 0.8-0.12% acidulant is added for 8-12 minutes.
