PROBLEM TO BE SOLVED: To provide a method for improving taste in a processed food containing milks, specifically: to provide the method for improving the taste so as to afford both characteristics of body taste and sharpness in creams: to provide the method for improving the taste and physical property by which flavor and meltability in a mouth are good, and heat shock resistance is excellent in ice creams: and to provide the method for improving the taste by which softness and creaminess with the body taste are obtained in puddings.
SOLUTION: The taste improving agent for the milks processed food is obtained by using a maltotriose-containing saccharide composition containing &ge50%, economically preferably &ge50 to &le65% of maltotriose and &le25% of maltose based on the solid content as saccharide composition. The method for improving the taste of the milks processed food includes making the milks processed food contain the taste improving agent.
