The present invention relates to a food improver which can be produced by a simple method, is excellent in storage stability, and allows various foods added therewith to maintain taste or flavor as exhibited immediately after processed and cooked, for a long period of time. The food improver comprises a dispersion formed by dispersing a lamellar structural component of an organic acid monoglyceride in an aqueous solution comprising an emulsifier and a sugar. In the preferred embodiments of the present invention, there are used a sucrose fatty acid ester or a polyglycerol fatty acid ester as the emulsifier, an oligosaccharide as the sugar, and succinic acid monoglyceride as the organic acid monoglyceride.本發明係提供一種食品用品質改良劑,其製造方法簡單,保存穩定性優越,且添加於各種食品中時,可長時間維持剛加工和調理完後之食用感和風味。本發明係於含有乳化劑及糖類之水溶液中使有機酸單甘油酯之層狀(lamellar)構造體分散而成的食品用品質改良劑。於本發明之較佳態樣中,乳化劑為蔗糖脂肪酸酯或聚甘油脂肪酸酯,糖類為寡糖,有機酸單甘油酯為琥珀酸單甘油酯。
