PROBLEM TO BE SOLVED: To provide a sheet for food modification and a food modification method.SOLUTION: There is provided a sheet for food modification by adding alginic acid or alginate and flavor components such as a sweetening component, a saltiness component, a sourness component, a bitterness component, an umami component, extracts, alcoholic beverages, spices, seasonings and flavors to a nonwoven sheet consisting of natural cellulose fiber or the like such as a pulp fiber derived from plants. There is a food modification method for providing modified food by contacting food containing moisture of meat or fish or the like with the sheet for food modification.
