The present invention relates to a manufacturing method of aseptically packed cooked rice using specialty rice with embryo buds and, more specifically to a manufacturing method of aseptically packed cooked rice having a high survival rate of embryo buds by using specialty rice with embryo buds. To achieve this, the present invention comprises the steps of: polishing the specialty rice with embryo buds, Seonong 17ho in a low speed polishing method which decreases the rotation speed of a polishing machine sequentially; washing and immersing the polished rice; dehydrating the immersed rice and filling it inside a container; sterilizing the filled rice; cooking the sterilized rice; and after completing the cooking, packing the rice after filling, allowing the cooked rice to steam by its own heat by air-tightening the cooked rice, cooling and drying.본 발명은 특수미 쌀눈 쌀을 이용한 무균포장밥의 제조방법, 보다 상세하게는 특수미 쌀눈 쌀을 이용하여 쌀눈의 잔존율이 높은 무균포장밥의 제조방법에 관한 것이다.
