PROBLEM TO BE SOLVED: To provide an antioxidant formulation which can be simply used for oils-and-fats, and oil-and-fat foods, and contains an L-ascorbic acid fatty acid ester in a high density, and further precisely, to provide an antioxidant formulation which can be dissolved uniformly without heating an oil-and-fat too much, in which handling at time of adding is simple, and which does not spoil flavor of an added oil-and-fat or oil-and-fat food.SOLUTION: Ethanol- and diacylglycerol-containing liquid oil-and-fat are together used as a substrate which dissolves an L-ascorbic acid fatty acid ester, thereby even if the volatilization of ethanol takes place when added to an oil-and-fat of a formulation, the deposition of the crystal of an L-ascorbic acid fatty acid ester does not arise, and an L-ascorbic acid fatty acid ester can be quickly distributed and dissolved in a liquid oil-and-fat.COPYRIGHT: (C)2012,JPO&INPIT【課題】本発明は、油脂類および油脂食品に簡便に用いることができる、L-アスコルビン酸脂肪酸エステルを高濃度に含有する酸化防止剤製剤を提供する。さらに詳しくは、油脂を過度に加熱することなく均一に溶解することができ、添加する際の取り扱いが簡便で、添加した油脂あるいは油脂食品の風味も損なわない酸化防止剤製剤を提供する。【解決手段】L-アスコルビン酸脂肪酸エステルを溶解させる基材としてエタノールとジアシルグリセロール含有液状油脂を併用することで、製剤の油脂への添加時にエタノールの揮発が起こってもL-アスコルビン酸脂肪酸エステルの結晶の析出が生じず、液状の油脂にすばやく分散し溶解できる。【選択図】なし
