PROBLEM TO BE SOLVED: To provide an oil-and-fat composition suppressing foaming in high-temperature cooking, although containing α-linolenic acid in large quantities, and having excellent low-temperature resistance.SOLUTION: An oil-and-fat composition contains an oil-and-fat(s) meeting conditions: (1) the content of α-linolenic acid in fatty acids constituting the oil-and-fat is 15-45 mass% (2) the content of triacylglycerol (monoALA) composed of constituent fatty acids in the oil-and-fat consisting of one α-linolenic acid residue and two fatty acid residues other than that of α-linolenic acid is 25 mass% or higher (3) the mass content ratio [(monoALA)/(triALA)] of the content of triacylglycerol (monoALA) composed of constituent fatty acids in the oil-and-fat consisting of one α-linolenic acid residue and two fatty acid residues other than that of α-linolenic acid to the content of triacylglycerol (triALA) composed of constituent fatty acids in the oil-and-fat consisting of the α-linolenic acid residue alone is 3 or greater and (4) the total content of saturated fatty acids in the fatty acids constituting the oil-and-fat is 15 mass% or lower.COPYRIGHT: (C)2014,JPO&INPIT【課題】α-リノレン酸を多く含みながらも、高温加熱調理時の泡立ちが抑制され、且つ低温耐性に優れた油脂組成物の提供。【解決手段】次の(1)~(4):(1)油脂を構成する脂肪酸中のα-リノレン酸の含有量が15~45質量%、(2)油脂中の構成脂肪酸がα-リノレン酸残基1つとα-リノレン酸以外の脂肪酸残基2つからなるトリアシルグリセロール(monoALA)の含有量が25質量%以上、(3)油脂中の構成脂肪酸がα-リノレン酸残基のみからなるトリアシルグリセロール(triALA)の含有量に対する、油脂中の構成脂肪酸がα-リノレン酸残基1つとα-リノレン酸以外の脂肪酸残基2つからなるトリアシルグリセロール(monoALA)の含有量の比(含有質量比)[(monoALA)/(triALA)]が3以上、及び(4)油脂を構成する脂肪酸中の飽和脂肪酸の合計含有量が15質量%以下、を満たす油脂を含有する油脂組成物。【選択図】なし
