To provide butter creams having shape-retaining properties (hardness) satisfactory as butter cream even when using no partially hydrogenated oil, excellent in meltability and flavor and having low trans fatty acid.

SOLUTION: The butter cream contains 25-90 mass% of an oil phase containing oil-and-fat X satisfying the following (1) and (2): (1) trans-type unsaturated fatty acid accounts for &le 5 mass% and &le 14C saturated fatty acid accounts for 25-60 mass% and &ge 20C saturated fatty acid accounts for &le 1 mass% each in the constituent fatty acid of the oil-and-fat (2) the mass ratio of triglyceride (component (a)) having constituent fatty acid with the total carbon number of &le 40 to triglyceride (component b) having constituent fatty acid with the total carbon number of 42-48, is a/b=0.2-1.
