PURPOSE: A Chinese stuffed pancake jam composition using black sugar as a main component, and a Chinese stuffed pancake jam using thereof are provided to enable users to easily cook Chinese stuffed pancake. CONSTITUTION: A Chinese stuffed pancake jam composition is obtained by the following steps: mixing 85-95wt% of black sugar, 5-15wt% of nuts, 0.1-2wt% of xylose, and 0.1-5wt% of cinnamon powder; compressing the mixture in a molding frame; and cooling the obtained composition at 5 deg. C for 1 seconds-5 minutes, and vacuum packaging. The mixing process is performed by using a mixer at 33-45 deg. C.본 발명은 흑설탕을 주원료로 하는 호떡잼 조성물 및 이를 기존의 분말 형태가 아닌 고형물의 형태로 성형하여 호떡 성형시 간편하게 넣을 수 있도록 고형화된 호떡잼을 제조하는 방법에 관한 것이다.
