PROBLEM TO BE SOLVED: To provide an oil-and-fat composition having excellent water dispersion and thereby applicable to various kinds of usage, and added to a food product to improve palate feeling or flavor of the food.
SOLUTION: The oil-and-fat composition contains oil and fat, monoglycelide and a polyglycelyl fatty acid ester. In a desirable mode, the composition contains alcohol, where the constituent fatty acid in the monoglycelide comprises unsaturated one, and an average degree of polymerization of the polyglycelyl fatty acid ester is 3-12.
