The bean curd manufactured by the method of the present invention coagulates the soybean milk with a natural coagulant, the Cannabis sativa seed extraction liquid, instead of the chemical coagulant to eliminate the controversy of harmfulness caused by chemicals, has the texture which is similar to the texture of the conventional bean curd to add useful components contained in the Cannabis sativa seeds, and can increase the absorption rate of calcium which is richly contained in the bean curd to manufacture the high-quality bean curd.본 발명은 두부제조에 사용되는 응고제로서 종래의 화학응고제 대신에 대마씨 추출액으로 두유를 응고시켜 종래의 두부와 같은 식감이 나도록 하는 두부제조방법 및 이 방법으로 제조된 두부에 관한 것이다.본 발명의 방법으로 제조되는 두부는 화학응고제 대신에 천연응고제인 대마씨 추출액으로 두유를 응고시키므로 화학약품에 의한 유해성 논란을 배제할 수 있으며, 종래의 두부와 같은 식감을 나타내면서 대마씨에 함유된 유용성분을 두부에 부가할 수 있고 두부에 풍부하게 함유된 칼슘의 체내흡수율을 높일 수 있어서 고품질의 두부제조가 가능하다.
