A process for the preparation of an ultra filtration residue, which consists essentially of albumins, wherein the method comprises:a) a step of the microfiltration or centrifugation of soluble peas fractions, which leads to a micro filtration permeate or a centrifugation supernatant leads,b) followed by a step of the ultrafiltration permeate or centrifugation, filtration of the microcomputer via state, and which leads to an ultrafiltration permeate and an ultrafiltration retentate, which consists essentially of albumins, leads.
