PROBLEM TO BE SOLVED: To provide an oil and fat composition for coating reducing trans aliphatic acid while securing solidification speed and mouth melting equal to or more than an oil and fat composition for coating using conventional cured oils and capable of suppressing flavor deterioration due to oxidation or light deterioration of lipid and soap odor due to free aliphatic acid by long term storage and excellent in storage stability.SOLUTION: An oil and fat composition for coating contains a transesterification oil and fat of a lauric oil and fat and a palm oil and fat, wherein the transesterification oil and fat has saturated aliphatic acid amount having 14 or less carbon atoms in total constitutional aliphatic acid of less than 20 mas% and content of the transesterification oil and fat is over 60 mass% and 90 mass% or less based on total amount of the composition.SELECTED DRAWING: NoneCOPYRIGHT: (C)2017,JPO&INPIT【課題】従来の硬化油を使用したコーティング用油脂組成物と同等以上の固化速度と口溶けを確保しつつ、トランス脂肪酸を低減し、かつ長期保存による、脂質の酸化や光劣化による風味劣化と遊離脂肪酸による石鹸臭を抑制することができ保存安定性に優れたコーティング用油脂組成物を提供する。【解決手段】ラウリン系油脂とパーム系油脂とのエステル交換油脂を含有し、前記エステル交換油脂は全構成脂肪酸中の炭素数14以下の飽和脂肪酸量が20質量%未満であり、前記エステル交換油脂の含有量が組成物全量に対して60質量%超90質量%以下であることを特徴としている。【選択図】なし
