PROBLEM TO BE SOLVED: To provide a method for effectively manufacturing targeted oil and fat rich in triglyceride by effectively using aliphatic acid ester or the like isolated by-produced derived from a raw material raw and fat, which is separated from the targeted oil and fat after reaction in the case that the targeted oil and fat rich in triglyceride is manufactured by a transesterification with oil and fat and aliphatic acid ester or the like as raw materials.SOLUTION: In a composite reaction system including a plurality of reaction systems for manufacturing a targeted oil and fat composition rich in triglyceride by 1,3-position specific transesterification of raw material oil and fat and raw material aliphatic acid or lower alcohol ester thereof, an isolated aliphatic acid or lower alcohol ester fraction derived from 1,3 position of the raw material oil and fat is separated from a reaction product after the 1,3-position specific transesterification of each reaction system and the fraction is used as a part or all of raw material aliphatic acid or lower alcohol ester of other reaction system.SELECTED DRAWING: Figure 1【課題】油脂と脂肪酸エステル等を原料としたエステル交換反応によって目的とするトリグリセリドに富む油脂を製造する場合において、反応後に目的油脂と分離される原料油脂に由来して遊離副生する脂肪酸エステル等を有効利用し、目的とするトリグリセリドに富む油脂を効率的に製造する方法の提供を課題とする。 【解決手段】原料油脂と原料脂肪酸又はその低級アルコールエステルとを１，３位特異エステル交換反応することで目的とするトリグリセリドに富む油脂組成物を製造する反応システムを、複数含む複合反応システムにおいて、それぞれの反応システムの１，３位特異エステル交換反応後の反応生成物から、原料油脂の１，３位に由来し遊離した脂肪酸又はその低級アルコールエステル画分を分離し、当該画分を別の反応システムの原料脂肪酸又はその低級アルコールエステルの一部又は全部として用いる。【選択図】図１
