PROBLEM TO BE SOLVED: To provide a powdery oil and fat which hardly causes liquid oil to ooze out during a long-term storage, excellent in flavor and meltability in the mouth, with the flavor to be maintained for a long-term and foods and beverages using the same.SOLUTION: The powdery oil and fat includes an oil and fat coated with a pulverized base material. The oil and fat contains a transesterified oil of a palm kernel oil and a palm oil and fat. The oil and fat includes 15 to 85 mass% of the total of a 2-saturated triglyceride which contains two saturated fatty acids (S) and one unsaturated fatty acid (U) as constituent fatty acid and a 3-saturated triglyceride which contains three saturated fatty acids (S) as constituent fatty acid, having a lauric acid content of 15.0 mass% or less in the entire constituent fatty acids.COPYRIGHT: (C)2015,JPO&INPIT【課題】長期保存しても液状油の染みだしが起こりにくく、風味と口溶けが良好で、かつ長期に渡り良好な風味を維持することができる粉末油脂とそれを用いた飲食品を提供する。【解決手段】油脂に粉末化基材が被覆された粉末油脂であって、油脂として、パーム核油とパーム系油脂とのエステル交換油脂を含有し、油脂における、構成脂肪酸として飽和脂肪酸(S)を2個、不飽和脂肪酸(U)を1個含む2飽和トリグリセリドと、構成脂肪酸として飽和脂肪酸(S)を3個含む3飽和トリグリセリドとの合計量が15~85質量%、全構成脂肪酸中のラウリン酸量が15.0質量%以下であることを特徴としている。【選択図】なし
