PROBLEM TO BE SOLVED: To provide a manufacturing method that manufactures an alternative coffee that has a color, taste and smell similar to those of coffee using a sword bean as a raw material.SOLUTION: Beans of a sword bean are fed into a roast boiler, performed by roast adjusting heating power and wind force to become 220°C-240°C for 20-25 minutes, added with a small quantity of water while stirring after the roast, and cooled rapidly by a large amount of wind force to manufacture an alternative coffee having a color, taste and smell similar to those of coffee.COPYRIGHT: (C)2014,JPO&INPIT【課題】ナタ豆を原料として、コーヒーと同様の色,味,香りを有する代用コーヒーを製造する製造方法を提供する。【解決手段】ナタ豆の豆を焙煎釜に投入し、20~25分間で220℃~240℃になるように火力,風力を調整して焙煎を行ない、焙煎後に、攪拌しながら少量の水をかけ、大量の風力で急速冷却して、コーヒーと同様の色,味,香りを有する代用コーヒーを製造する。【選択図】なし
