PROBLEM TO BE SOLVED: To provide a method for producing an apple with a sugar core capable of suppressing change of color by oxidation and generation of mold while immersing inside the apple in a saccharide such as sugar.SOLUTION: The method for producing the apple with the sugar core by immersing the apple in the saccharide such as sugar includes: an immersion step 1 of immersing a peeled apple in water at 20-30°C which contains trehalose having a Brix of 20-25 and ascorbic acid having a pH of 3.5-4.0 a vacuum heating step 2 of immersing the apple in water which contains sugar having a Brix of 20-25 after the preservation step, and heating thereof at 70-80°C in a vacuum chamber having MPa of -0.04 to -0.06 a sugar immersion step 3 of immersing the apple in water at 20-30°C which contains sugar having a Brix of 55-60 after the vacuum heating step and a drying step 4 of drying the apple at 60°C after the sugar immersion step.COPYRIGHT: (C)2012,JPO&INPIT【課題】砂糖などの糖類をりんごの中まで浸漬させるとともに、酸化による変色やカビの発生を抑えた蜜りんごの製造方法を提供する。【解決手段】りんごに砂糖などの糖類を浸漬させて製造する蜜りんごの製造方法であって、皮を剥いた上記りんごを、Brix20~25のトレハロースおよびpH3.5~4.0のアスコルビン酸を含有する20~30℃の水に浸す浸漬工程1と、上記浸漬工程後に、上記りんごを、Brix20~25の砂糖を含有する水に浸すとともに、-0.04~-0.06MPAの真空室内において70~80℃に加熱する真空加熱工程2と、上記真空加熱工程後に、上記りんごを、Brix55~60の砂糖を含有する20~30℃の水に浸す蜜漬け工程3と、上記蜜漬け工程後に、上記りんごを、60℃の温度によって乾燥する乾燥工程4とを有している。【選択図】図1
