The present invention relates to a method for preparing a Curcuma xanthorrhiza Roxb. extract. The present invention provides a method for preparing a Curcuma xanthorrhiza Roxb. extract comprising: a step of extracting Curcuma xanthorrhiza Roxb. by supercritical extraction to thereby obtain an extract comprising xanthorrhizol as an active ingredient； a step of extracting the residue of the supercritical extraction by alcohol extraction or supercritical extraction to thereby obtain an extract comprising curcumin as an active ingredient； a step of subjecting the residue of the alcohol extraction or supercritical extraction to an enzyme treatment to thereby obtain immunopolysaccharides having an average molecular weight of 33,000 Da； and a step of obtaining an insoluble dietary fiber in the residue of the enzyme treatment, and provides an extract comprising xanthorrhizol, curcumin, immunopolysaccharides, and insoluble dietary fibers obtained by the method described above, and general food, health functional food, cosmetic, and pharmaceutical compositions comprising the extract as an active ingredient.
