An edible tree fungus noodle and its manufacturing method are disclosed, comprising the following steps: (A) substantially stirring prepared food material evenly (B) calendaring the food material until becoming compact (C) substantially cutting the food material to noodle shape wherein the food material comprises 0.7% to 7% of edible tree fungus powder and 80% to 85% of flour, thereby providing noodle with fresh mouthfeel and elasticity which is not broken or decomposed easily during cooking.一種木耳麵及其製造方法,包括下列步驟:(A)把預先準備好之食材大致攪拌均勻;(B)壓延該食材至緊實;(C)把該食材大致切成麵條狀;其中,該食材包含有0.7%-7%之木耳粉與80%-85%之麵粉。藉以提供口感新鮮有彈性之麵條,且其在烹煮的過程中不易破裂或分解者。
