PURPOSE: Cheongukjang containing supplejack roots is provided to remove toxicity such as mercury, nickel, and cadmium, and to prevent constipation. CONSTITUTION: A manufacturing method of Cheongukjang containing supplejack roots comprises a step of mixing 7 wt% of supplejack roots into 93 wt% of ocher water, boiling the mixture for 4-5 hours, and generating extraction solution； a step of mixing 33 wt% of mill, grain, and grain of barley into 67 wt% of the supplejack roots extraction solution, and soaking the same for 4-5 hours； a step of putting 11 wt% of steaming 11 wt% of mill, 11 wt% of grain, and 11 wt% of grain of barley for 3-4 hours； a step of fermenting the same at 45-50 °；C while maintaining humidity of 70-80 %； a step of drying the same at 100 °；C drier for 12 hours, and pulverizing the same to form powder.본 발명은 망개나무뿌리를 함유한 청국장에 관한 것이다.본 발명에 따른 망개나무뿌리를 함유한 청국장은, 황토를 걸러서 만든 지장수 93중량%에 망개나무뿌리 7중량%를 혼합한 후, 4∼5시간 정도 끓여 추출액을 생성하는 단계와 상기 추출액 67중량%에 33중량%의 대두, 밀, 보리쌀이 동일한 비율로 혼합하여 4∼5시간 정도 불리는 단계와 상기 추출액 67중량%에 불린 대두 11중량%, 밀 11중량%, 보리쌀 11중량%를 가마솥에 넣어 3∼4시간 정도 끓여 푹 삶도록 하는 증자단계 및 삶은 대두, 밀, 보리쌀을 넣어 45℃∼50℃의 온도에서 습도 70∼80%를 유지하며 3일간 발효시키는 단계를 포함하여 만들어지는 것을 특징으로 한다.
