PROBLEM TO BE SOLVED: To provide a novel feed which has a higher nutritive value, as well as excellent digestibility, shelf life and palatability by swelling and fermenting, not limited to a grain feed obtained by heating and flaking, and to provide a technique for producing such a feed.SOLUTION: A method for producing fermented feed of swollen grain comprises equally removing humidity (4) from wet grain obtained by immersing a grain raw material into water (3) and then injecting steam (6) over a given time to obtain a high temperature swollen grain (9), turning it into a cooling swollen grain (11) of given water content, agitating the cooling swollen grain and a sugar solution (13) to obtain a sugar solution-mixing swollen grain (14), promoting initial proliferation of lactic acid bacteria under anaerobic conditions (18) in the sugar solution-mixing swollen grain, followed by promoting a lactic acid fermentation under a sealing condition (19) to age (21), and obtaining fermented feed of swollen grain (22)with a certain moisture content.【課題】 加熱・圧ぺん処理による穀物飼料に留まらず、最終的に膨潤化および発酵処理によって、より一層栄養価値に秀れ、しかも消化性、保存性および嗜好性にも秀れた新たな飼料およびその生産技術を提供する。【解決手段】 穀物原料を水に浸漬（３）した浸漬穀物から均等排水（４）した上、水蒸気を所定時間に亘り噴射（６）して得た高温膨潤化穀物（９）を、所定水分含有率の冷却膨潤化穀物（１１）としてから、該冷却膨潤化穀物と糖質溶液とを攪拌（１３）して得た糖質溶液混合膨潤化穀物（１４）を、嫌気条件下にて乳酸菌の初期増殖を促進（１８）させた後、密閉条件下（１９）にて乳酸発酵を促進して熟成（２１）させ、一定水分量の膨潤化穀物発酵飼料を得る（２２）ようにしてなる膨潤化穀物発酵飼料の製造方法である。【選択図】 図１
