PROBLEM TO BE SOLVED: To provide a food modifier that prevents a deterioration of food such as meat or fish meat and improves texture even after cooking by heating.
SOLUTION: The food improver includes at least one or more compounds selected from the group consisting of a compound (A) containing a phenolic hydroxy group but not a carboxy group and a compound (B) having an enolate structure, a sugar (C) of disaccharide or polysaccharide (other than the components (A)) and (B), and a carboxy group-containing compound (D) (other than the components (A), (B) and (C)) and has a pH of 7.01-12.
