To provide a method for producing palatable fried rice and frozen fried rice comprising continuously frying cooked rice and to provide a device for producing palatable fried rice and frozen fried rice.
SOLUTION: The method for producing fried rice comprises: (1) a process for preparing cooked rice mixed with ingredients and seasoning and edible oil and fat (2) a process for continuously feeding the cooked rice to one end of a cylindrical body both ends of which are open and which is provided with a heating means and set up so as to let its center line almost horizontal, frying the cooked rice and removing steam from the cylindrical body and (3) a process for continuously taking the fried cooked rice from the other end of the cylindrical body to make fried rice. In the process (2), the steam-removing process where an exhaust means mounted to the cylindrical body is preferably employed to remove the steam. A process for freezing the fried rice obtained after the process (3) may be set up.
