PROBLEM TO BE SOLVED: To provide a method for producing frozen cooked rice by which frozen cooked rice always having flavor like that of just-cooked rice and comprising only polished rice is obtained regardless of an amount of rice to be cooked, frozen cooked rice comprising healthy mix rice reduced in use of oil is obtained through using the frozen cooked rice, the running costs in its production line is reduced, and the sanitary standard is maintained to be at a high level.SOLUTION: The method for producing frozen cooked rice comprises a first process of soaking rice grains in water, a second process of raising a water content ratio of the rice grains obtained in the first process to 37-42 wt.%, a third process of draining water in the rice grains obtained in the second process, and a fourth process of freezing the rice grains obtained in the third process.COPYRIGHT: (C)2008,JPO&INPIT【課題】調理の量に関係なくいつでも炊きたて米飯の風味を有する白米だけからなる凍結米飯の提供とともに、その凍結米飯を用いて油の使用を減らしたヘルシー混ぜご飯の凍結米飯を提供できるようにし、さらには、製造ラインのランニングコストも低減でき、また、製造ラインの衛生水準を高く維持できる凍結米飯の製造方法を提供する。【解決手段】米粒を水に浸漬する第一工程と、その第一工程で得られた米粒の含水率を37%乃至42%まで上昇させる第二工程と、その第二工程で得られた米粒を水切りする第三工程と、その第三工程で得られた米粒を冷凍する第四工程とから構成した。【選択図】 図1
