PURPOSE: A production method of processed and boneless chicken feet is provided to improve the chewy texture of the chicken feet when chewing, and to prevent the change of nutrition including gelatin and collagen.CONSTITUTION: Foreign substances on chicken feet are washed (1). The washed chicken feet are crushed, and ground meat is extracted (2). Bad smell is removed from the ground meat using high temperature salting water (3). The ground meat is inserted into a mold in a shape of the chicken feet, and molded into a chicken feet shape by high pressure (4).
