PURPOSE: A method for preparing fermentation liquid of pericarp of Ginkgo biloba L. is provided to obtain sweet taste without bad smell of Ginkgo biloba L. and to treat atopic dermatitis. CONSTITUTION: A method for preparing fermentation liquid of pericarp of Ginkgo biloba L. comprises: a step of fermenting Ginkgo biloba L. pericarp at 0°；C-5°；C for 2-4 months under the anaerobic condition； a step of fermenting at 10°；C-18°；C for 2-4 months under the anaerobic condition； a step of juicing fermented pericarp to obtain juice； and a step of adding 0.5-5.0 weight parts of Zingiberis Rhizoma crudus to 100 weight parts of juice and heating.본 발명은 은행 외과피 발효액의 제조 방법을 개시한다. 구체적으로 본 발명은 (a) 은행 외과피를 0℃ 내지 5℃의 범위의 온도에서 혐기적으로 2~4개월 발효시키는 단계, (b) 그 다음 발효 온도를 높여 10℃ 내지 18℃의 범위의 온도에서 혐기적으로 2~4개월 발효시키는 단계, 및 (c) 발효된 외과피를 착즙하여 얻어진 착즙액에 그 착즙액 100 중량부 대비 0.5 중량부 내지 5.0 중량부의 생강을 첨가하여 가열하는 단계를 포함하여 구성되는 은행 외과피 발효액의 제조 방법을 개시한다. 본 발명의 은행 외과피 발효액은 발효되지 아니한 은행 외과피와 달리 단맛을 내고, 악취가 없으며, 아토피 피부염 개선 활성 등의 기능성을 지닌다.
