PROBLEM TO BE SOLVED: To provide a relatively easy method for manufacturing an acidity reducing material which properly reduces the acidity of fermented milk products and fruit juices without adverse effect of the own taste of the material on the flavor inherent to a subject food and drink.SOLUTION: The method for manufacturing an acidity reducing material includes: a step (a) of adding water and a polar organic solvent or a mixture thereof to a roasted coffee beans for extraction treatment at 50 to 100°C for 1 to 5 hours so as to obtain a coffee extract a step (b) of contacting the coffee extract obtained in the step (a) with a synthetic adsorbent for adsorption treatment and a step (c) of eluting an acidity reducing material-containing coffee component adsorbed to the synthetic adsorbent with a solvent.COPYRIGHT: (C)2014,JPO&INPIT【課題】発酵乳製品や果汁類等の酸味を適度に軽減し、それ自体の味が使用する飲食品本来の風味に悪影響を与えることがなく、比較的簡便な方法で製造可能な酸味軽減物質の製造方法を提供することである。【解決手段】本発明は、(a)焙煎コーヒー豆に、水、極性有機溶媒又はこれらの混合物を添加して50~100℃で1~5時間、抽出処理を行ってコーヒー抽出物を得る工程、(b)工程aで得られたコーヒー抽出物を合成吸着剤に接触させて吸着処理を行う工程、(c)合成吸着剤に吸着された酸味軽減物質含有コーヒー成分を溶媒で溶出させる工程、を含むことを特徴とする酸味軽減物質の製造方法、である。【選択図】なし
